NO SHIT!

I've worked 192 hours in the last 16 days. No breaks and no time to do anything except eat and shower. Woman is out of town and the animals take extra work every morning and evening. So tired and so over this fucking load-in. Can't wait until the cheques start arriving! BBQ action and online poker this weekend.

Pmahn I'm going to get one of those monitors when I get an egg in a couple of weeks. 40% off through my company discount. Word.

1 rack of lamb

Egg was acquired. This was the maiden voyage.

I was told by several people that the ribs were the best they had ever had. It's hard to say what was the most tasty, but those lambsicles for dessert were a lovely bit of treat. fleur de sel and a bunch of garlic and evoo. so fucking tasty.

Today?

12 hour chuck roast for pulled beef sammies.
12 hour short rib

and the centerpiece I got a 3 rib standing rib roast. 5 hours at 200 and it should be fucking perfect. keep ya posted.

Rib beta? Take rib. Put in mouth. Gently pull so that meat falls off the bone. Chew with a look of ecstasy on your face.

No really I just smoked em for 2.5 hours at around 225, then up to 250-260 for an hour foiled with a tiny bit of juice, then back on the direct grill for a quick 30 minutes at high temp to make the outside crispy. I like the crispy bits so thats a matter of taste. The first two racks we did we did not fire them direct and they weren't as crispy. Word.

BTW for those not paying attention yes we ate the meat of four different animals off the bone. heh.
