in terms of squirrels, they're usually case skinned: cut at the ankle joints, up the inside of the legs, up the tail or just snip it (mepps pays 1$ per tail), then peel the skin back. it helps if you have a friend hold the legs, or use strong alligator clips. if you want to do it properly, carefully skin out the head, right down to the eyelashes. stretch that inside out on a board carved to a gentle point; salt the skin with alum. something to trim your slippers with.

now you've got your squirrel fur free. carefully cut up the belly to the ribs- don't puncture any intestines. remove all the insides, sex glands, etc. count 2 ribs up and cut off the front half- it's too small to chew on. you can store your squirrels up until you have enough for a feed.

don't overcook it- there's little fat in the meat and it can get tough. just dredge and brown quick in butter and reserve, add the onions, then hot stock- parsely, thyme, worchestershire, sugar, potatoes, lima beans, chopped tomato, corn and the squirrels.

Anyone know how to harvest walnuts? I have a walnut tree, but all the nutz fall to the ground and rot or the squirrels get them.

P.S. Anyone know how to gut squirrels and have a good recipe for Brunswick Stew?

Picked 3 gallons of raspberries and a gallon of strawberries yesterday, need to do it again tomorrow. And like 15 acres of huckleberries. All within 5 minutes from the house. And today I boldered water polished gneiss next to Myrtle Falls, amazingly good but 45 minutes away is teh suck.

Thanks for the Mepps link. I love Mepps spinners. In the payment area they say you can trade the tails for lures. There was a number (I.e. 16). Is that how many lures you can get per tail... seems like a lot. I live in kind of a suburban neighborhood. My biggest problem is probably neighbors having an issue with me hanging and gutting sqwerrils in my back yard. The squirrels are plenty and healthy though.... Walnut fed. And, we have a ton of Rabbits too. My only concern is parasites, etc. I need to do some research.....
