You need the consistent indirect heat, which charcoal does not easily provide.

I'm going to step off my high horse. I'm sure your beer butt chicken was delicious. Just that I've been indoctrinated into some odd hatred of propane, where the only acceptable means of cooking is with ceramic and lump.

I don't put fries on salads, but when I replicate Primanti's in my own kitchen, I oven bake the fries. Summer fries come straight off the grill.

Oh hell yes.

I fry mine at the house in high-heat safflower oil, to reduce the fat. The secret is boiling a quart of water, turning it off, dissolving a cup of sugar in it, and then dumping cut fries in for 15 minutes to soak in sugar water. Dry them before frying if you wanna keep your eyes.
