1/4tsp instant yeast
3cups flour
1 1/4tsp salt

Mix it up. Add ~3.5 cups water. Mix it up again, adding a bit more flour or water to get the dough good and shaggy. Cover, let sit for 20 hours. Uncover, fold twice, recover for 30 minutes. Put dough ball seem side down on cotton cloth with bran, flour, coconut, whatever. Put whatever on top. Cover with another cotton cloth and let rise for 2 hours. Preheat dutch oven to 450, put dough in dutch oven covered for 30 minutes. Take cover off and cook for another 15-30 minutes until the crust looks done.
Other shit in the birfday loaf was old bananas, chocolate, and shredded coconut.
